So, as the title suggests, we like to keep things simple.
They say simplicity is the ultimate sophistication (and both Ellie and I like to convince ourselves of that), so whenever you see ‘Stupidly Simple’ title, you know we’re keeping things nice and easy.
This is a really quick and simple recipe for salsa. One of those things that loads of people pick up in a jar rather than making at home, but it is super quick and tastes so much better (about 1000 time better) when you make it yourself.
- 1 large tomato
- 1 lime
- 2 spring onions
- 1 chili (more or less to preference)
- 1 or 2 cloves of garlic
- 1 bunch of coriander
Once you have all your ingredients it is as simple as chopping them up and throwing them in a bowl. The garlic, chili and spring onion should be very finely chopped (mostly so you don’t bite into a huge chunk of chili!). The tomato you want to roughly chop, taking out the chore but leaving in everything else and the coriander should be roughly chopped too. From the lime you only want the juice, but this makes all the difference so don’t skip it! You could use 3 table spoons of bottled lime juice if it’s easier, but I prefer fresh.
And that’s it. All done. See, stupidly simple!
I usually just eat this with nachos as a healthier alternative to pretty much anything else. However, it is also really nice on white fish if you don’t want to go down the “chips and dip” or Mexican route.
