Time for Tea: Seed Cake

So this is a recipe that my mum always used to make. It is really simple and totally yummy!

It is basically a basic sponge with a couple of extras in… namely, seeds (I know, the name didn’t give it away at all!)

  • 200g plain flour
  • 200g caster sugar
  • 200g butter (soft)
  • 3 eggs
  • 2 tsp baking powder
  • 1 tsp each caraway seeds, nutmeg, all spice

So as you can see it is not a complex ingredients list, and it isn’t a complex process either.

You’ll need to pre-heat your over on 180C and line a cake or loaf tin (I used a cake tin with a detachable base, so it’s easy to get the cake out).

Then mix the sugar and butter together, until it they are fully combines, light and creamy.

Then, add everything else and mix.

When the mixture is all combined, wack it in your cake tin…

And then into your oven for about 30-45 minutes (depending on your over, mine took 45).

Then, when you can poke a knife into the middle of the cake (all the way down) and it comes out clean, your cake is ready. It’s as simple as that!

Seed cake

For today’s tea paring I think I would go with a strong black tea, maybe a Russian caravan or a lapsang, because of the caraway and spicy nutmeg. Perfect for a rainy day! (like today!)

Enjoy 🙂
